Salt water taffy was created in Atlantic City, New Jersey in the late 1800s and has been a boardwalk staple ever since. Legend has it that a candy-store owner named David Bradley coined the name “salt water” taffy as a joke after his store was flooded with the Atlantic’s salty waters in 1883. True or not, salt water taffy quickly became popular and peddlers could be seen “pulling” the taffy mixture (taffy is composed of sugar, cornstarch, corn syrup, butter, salt, and other flavors, and pulling it traps air which softens the confection). May 23rd is celebrated as National Taffy Day, a day to make or enjoy this sweet summertime treat.
